Yes, that is an accepted terminology.

But humbucking is a verb. To "buck"(get rid of) the hum, no? Is guitar playinger accepted too? I find this very unsettling.

Maybe it is an contraction of "humbucking pickups" but I've definitely heard that term used, maybe an english thing.
